Brown Sugar Dijon Pork Tenderloin

This Brown Sugar Dijon Pork Loin is a great family dinner that can be dished out and served throughout the week.

  • 1 1/2 lb port tenderloin
  • 1 tbsp olive oil
  • 2 tbsp French’s Dijon Mustard
  • 1/4 cup brown sugar
  • salt and pepper to taste

Brown Sugar Dijon Dipping Sauce

  • 2 tbsp French’s Dijon Mustard
  • 1 to 2 tsp brown sugar


  1. Preheat oven to 400F. Season the pork tenderloin with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat.  Add port tenderloin and brown about four minutes per side.  Remove from heat
  3. Place pork tenderloin in an oven proof pan.  Brush the entire pork tenderloin with French’s Dijon Mustard.  Then sprinkle the pork tenderloin with brown sugar all over and press gently with your fingers to make it absorb it in.
  4. Back, uncovered for 30 to 40 minutes, or until port tenderloin is cooked.  Remove from oven and let sit for 10 minutes before slicing.
  5. Slice and serve with a brown sugar dijon dipping sauce if desired.  To make the dipping sauce, mix together the dijon mustard and brown sugar.

Low Carb Unstuffed Cabbage Casserole

This low carb unstuffed cabbage casserole is a great family dinner that can be dished out and served throughout the week.

  • Prep Time: 10 minutes
  • Cook Time: 25 minutes


  • 3 Tablespoons Oil
  • 1 Lb Ground Turkey
  • 1 Lb Turkey Sausage
  • 1 Sweet Onion (chopped)
  • 1 Orange Bell Pepper (chopped)
  • 3 Garlic Cloves (chopped)
  • 14 oz Can Roasted Diced Tomatoes
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt/Pepper (to taste)
  • 1 Small Head Green Cabbage (chopped)


  1. Saute oil, beef, onion and orange pepper over medium/high in large pan with high sides or a dutch oven. Cook until beef is browned and onions are translucent.
  2. Add garlic and saute 1 more minute.
  3. Stir in tomatoes, spices, salt and pepper. Top with cabbage. Cover and cook 15-20 minutes or until cabbage is tender.

Baked Stuffed Sweet Potato

Makes 2 Servings, 1 potato with 1 cup filling

  • 2 small sweet potatoes, washed, pierced several times with a fork
  • 1 1/2 cups shredded roasted chicken breast, boneless, skinless
  • 1/2 cup black beans
  • 2 tsp. extra-virgin olive oil
  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground coriander
  • 1 dash sea salt
  • 2 Tbsp. chopped fresh cilantro


  1. Preheat oven to 400º F.
  2. Bake sweet potatoes for 35 to 45 minutes, or until tender.  Cut sweet potatoes almost in half lengthwise
  3. While sweet potatoes are baking, combine chicken, beans, oil, cumin, coriander, and salt in a small saucepan; cook, over medium-high heat, stirring constantly, for 4 to 5 minutes or until hot
  4. Top sweet potatoes evenly with chicken mixture. Sprinkle evenly with cilantro.
  5. Serve Immediately
